Oreo Brownies


Ingredients:
* 1/3cup Dark Baking Chocolate, chopped 
* 1/3cup Semi-Sweet Chocolate Chips 
* 1cup Unsalted Butter at room temperature 
* 2 + 2/3cups Granulated Sugar
* 1/4cup Cocoa Powder
* 4 Eggs
* 1tsp Vanilla Extract 
* 1/2tsp Salt
* 1 + 1/3cup All Purpose Flour 
* 12-14 Oreo Cookies



Directions:
1. Pre-heat oven to 350degrees F. Line a 8x8 inch square baking pan with parchment paper, and then grease parchment paper. Leave some over hang so that it is easy to take the brownies out of the pan. 

2. Combine the chocolate and butter in a heat proof bowl (medium bowl), and microwave at 20 second intervals until chocolate and butter melts. Mix well in between heat bursts. 

3. Add the sugar and cocoa powder into the butter/chocolate mixture, and mix well. Add in the vanilla. Add in the eggs one at a time mixing well (so that eggs don't cook).

4. Stir in flour, whisking well. Pour half the batter into the prepared pan. Place the Oreo cookies over the batter, filling up the pan, in one layer. Pour the rest of the batter over the Oreo cookies, spreading evenly. 
Note: You can use any type of Oreos in this recipe. Should you choose to use mint, you may want to add some peppermint extract into your batter (together with vanilla extract). 


5. Bake at 350 degrees F, for 40-45 minutes. Baking time will vary depending on your oven, and pan you use. You want the fudge to be fully baked, but do not let the brownies dry out. You may need an additional 5 minutes. 

6. Once baked, leave on a wire rack to cool. Once cool enough to cut, cut into squares and enjoy!
