Cranberry Chocolate Blondies
Ingredients:
* 1/2cup Unsalted Butter
* 1 + 1/3cup Golden Sugar
* 1tsp Vanilla Extract
* 2 Eggs
* 1/2tsp Baking Powder
* 2cups All Purpose Flour
* 1/2cup White Chocolate Chips
* 1/3cup Dried Cranberries
* Sea Salt to sprinkle once baked
Directions:
1. Pre-heat oven to 350degrees. Line 8x8 inch baking dish with parchment paper. Grease lightly.
2. Using stand mixer or electric hand held mixer cream together the butter and sugar. Add the eggs and vanilla and whisk to combine. Scrape down the sides and bottom of the bowl as needed to ensure all ingredients are combined well.
3. In a separate bowl mix together the flour and baking powder.
4. Combine the flour mix into the butter/sugar mix, whisking until just combined.
5. Fold in the white chocolate chips and cranberries with a spatula gently.
6. Transfer the batter to the prepared baking dish, and bake at 350degrees for 22-25 minutes. The blondies are ready when the inserted tooth pick comes out relatively clean (not too baked or it will be dry, but not too doughy).
Note: You may need to grease your spatula to spread the batter evenly once in the baking dish, as the batter will be thick.
7. Sprinkle with sea salt as soon as you take it out of the oven. Leave in dish to cool for 10 minutes, then using the parchment paper, transfer the blondies to a wire rack to cool fully. Once fully cooled you can cut the blondies into bite size squares or larger squares depending on your preference.
8. These blondies can be stored in an air tight container for up to 1 week.
