Salted Caramel Nutella Blondies
Prep time: 15 minutes
Bake time: 25 minutes
Ingredients:
For the Blondies:
* 12tbsp of Nutella
* 2 Eggs at room temperature
* 1cup Brown Sugar
* 1/2cup Unsalted Butter
* 1tbsp Vanilla Extract
* 1 + 1/2cups All Purpose Flour
* 1/4tsp Salt
For the Salted Caramel Sauce:
* 1/2cup Brown Sugar
* 2tbsp Unsalted Butter
* 3tbsp Cream
* 1/4tsp Sea Salt Flakes
Optional:
* 6-8tbsp Nutella for the top of the blondies

Directions:
1. Make the salted caramel sauce and set aside to cool, first. To make the sauce, using a heavy bottomed pan, add in the brown sugar and heat on medium heat, stirring constantly until the sugar starts to melt. Reduce heat to low when it starts to melt and keep stirring as the it melts completely but does not harden.
Note: If you find it is starting to harden take it off the heat and stir until fully melted.
2. Add the butter to the sugar once melted, stirring well. Then take off heat and add in cream and sea salt flakes and keep stirring, until everything is fully incorporated. Leave to cool.
3. To make the Blondie batter, pre-heat the oven to 350degrees. Line a baking tray 8x8 with parchment paper, and then grease the parchment paper.
4. Using a stand mixer or hand held mixer, cream the butter and sugar, until its light and creamy. Add in the eggs and vanilla and keep mixing until incorporated.
5. Mix the flour and salt together in a separate bowl and then add the mixture to the butter/sugar mixture gradually, mixing as you add it in. Mix just enough to incorporate the flour mixture in.
6. Now fold the salted caramel sauce into the mixture using a wooden spatula.
7. Pour half the batter into the prepared pan. The batter will feel thick, and you may need to spoon it in and spread it out gently.
8. Place the tablespoons of Nutella evenly over the batter, and using a metal spoon to spread it. Take care not to mix the batter with the nutella as you spread it.
9. Pour the remaining batter over the top, and taking care not to mix the batter with the nutella, spread it out evenly.
10. Bake at 350degrees for 25 minutes. If you feel it is not fully cooked all the way through bake for an additional 2-3 minutes. Remove from oven and leave to cool in the pan for 10 minutes, prior to transferring to a wire rack to cool fully. When ready to cut into squares, transfer the blondies in the parchment paper to a cutting board, and cut squares.
Note: You can choose to cut the blondies into squares while they are semi-warm, or wait until they are fully cooled.
Optional: if you choose to top the blondies with Nutella, spread it on while the blondies are warm, 10 minutes out of the oven.
