Easy Pecan Pie Brownies
Prep time: 30 minutes
Bake time: 22 minutes + 20 minutes
I love the gooey goodness of a good brownie; but add the flavor and texture of pecan pie to a fudge brownie, and we have a winner! I hope you enjoy this recipe as I do.
Ingredients:
For the Brownie:
* 3/4cup+ 2tbsp Unsalted Butter
* 1 + 1/4cups Semi-sweet Chocolate Chips
* 1cup Granulated Sugar
* 3 Eggs
* 1tsp Vanilla Extract
* 1/2cup All Purpose Flour
* 1/4cup Cocoa Powder
* Pinch of Salt
For the Pecan Topping:
* 1/3cup Maple Syrup
* 3/4cup Brown Sugar
* 2 Eggs
* 2tsp Vanilla Extract
* 1/2tsp Salt
* 4tbsp Melted Butter
* 3 1/2cups Chopped or Whole Pecans
For the Chocolate Drizzle:
* 1/2cup Semi-sweet Chocolate chips
Directions:
1. Preheat the oven to 350degrees. Line a square baking dish (8x8) with foil and grease the aluminum foil and set aside.
2. Place the semi-sweet chocolate and the butter in a heat proof bowl. Microwave for 15 seconds, 3 -4 times. Using a hand whisk, mix the butter and chocolate together well. Pour the mixture into the bowl of a stand mixer (fitted with paddle attachment).
3. Add the vanilla and sugar and mix well. Ensuring the mixture has cooled, add in the eggs one at a time, mixing in between each addition.
4. Combine the flour, salt and cocoa powder in a bowl, mixing well. Add in the flour mixture to the wet ingredients and beat just enough to combine. Bake at 350degrees for 21 minutes.
5. While the brownie mix is baking, combine the maple syrup, brown sugar, vanilla extract, salt, and melted butter in a bowl. Mix well to combine. Add in the eggs one at a time, whisking well and thoroughly.
6. Fold in the pecans, until well coated. Once the initial baking is done, take the brownies out of the oven, and pour the mixture over the brownie layer, spreading evenly.
7. Place back in the oven. Bake for 20 minutes at 350 degrees. Remove from oven and leave to cool.
6. Place the chocolate chips in a microwavable bowl. Heat at 15 minute intervals 2 or 3 times. Mix well with a hand whisk until the mixture is smooth.
7. Once the brownies have cooled, remove them from the pan, and place on a board. Drizzle with the chocolate and leave to set for 15 minutes. Cut into squares and enjoy!
