Double Chocolate Walnut Muffins
Ingredients:
* 2 + 1/4cups All Purpose Flour, spooned and leveled
* 1 + 1/4cups Granulated Sugar
* 1/2cup Cocoa Powder
* 1tbsp Baking powder
* 1/2tsp Salt
* 2 Eggs
* 1/2cup Vegetabel Oil
* 1cup Buttermilk
* 1/4cup sour Cream
* 1tsp Vanilla Extract
* 1/2-3/4cup Semi sweet Chocolate Chips
* 1/2cup Chopped Walnuts
For the topping: melted chocolate chips (1/4cup)
Directions:
1. Preheat oven to 400degrees F. Line 12 medium size muffin cups with muffin liners or 6 large muffin cups.
Note: Photos show large muffin cups and liners.
2. Combine the eggs, buttermilk, sour cream, oil, and vanilla in a bowl and whisk to combine.
3. In a separate bowl, combine the flour, baking powder, sugar, cocoa and salt. Whisk to combine.
4. Add in the dry ingredients into the wet in three batches, whisking by hand in-between. Do not over mix, or the muffins will turn out dry and dense.
5. Fold in the choclate chips once evreything is combined. Then fold in the walnuts. Transfer into prepared muffin liners, filling it almost to the top of the liner.
6. Bake at 400degrees for 7 minutes. Then turn oven down to 325degrees, and bake for 15-17 minutes. Inserted toothpick should come out clean. Do not open oven door in between. If you would like them more chewy reduce baking time by a minute.
7. Once baked remove from oven and leave the muffins in the pan to cool for 5-10 minutes. Then transfer to a wire rack to cool fully. Once fully cooled drizzle the chocolate (melted in the microwave).
