Apple Crumble Muffins
What you will need: (makes 12 muffins -regular size)
For the topping:
* 2/3cup All Purpose Flour
* 1/4cup Brown Sugar
* 2 1/2tbsp Corn Syrup
* 1tsp Cinnamon powder
* 5tbsp Melted, unsalted butter
For the Muffins:
* 2cups All purpose Flour
* 1tsp Baking Powder
* 1/2tsp Baking Soda
* 1/2tsp Salt
* 1tsp Cinnamon powder
* 1/4tsp Nutmeg
* 1/4tsp Ginger powder
* 1/8tsp Cloves ground
* 1cup Granulated Sugar
* 2 Eggs
* 1/2cup Unsalted Butter at room temperature
* 1 1/2tsp Vanilla Extract
* 1 1/2cups Granny smith apples (tart apples)- peeled and diced
For the Glaze:
* 3/4cup Icing Sugar (Confectioners sugar)
* 1 1/2tbsp Milk
* 1/2tsp Vanilla extract
1. Make the topping by combining flour, brown sugar, corn syrup, and cinnamon.
2. Stir in the melted butter, making the mixture into a thick crumb like substance. Set aside.
3. Preheat oven to 425degrees. Line a 12 cup muffin pan with liners.
4. To make the apple muffins, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger and cloves, and salt, whisking the ingredients together - set aside.
5. Using a stand mixer (paddle attachment) whisk the butter and sugar until light and fluffy.
6. Turn mixer to low, and add eggs one at a time. Add the vanilla next, and scrape sides of the bowl with rubber spatula as it combines.
7. Add the flour mixture and apples to the bowl, a little at a time, and use a spatula to combine gently. Do not over mix.
8. Use an ice cream scoop to divide the batter up evenly between the 12 muffin liners.
9. Top with cinnamon crumble, pressing the mixture into the batter gently.
10. Bake at 425degrees for 5 minutes. Turn oven down to 350degrees and bake for another 10-14minutes. The muffins will be ready, once tops look golden and inserted toothpick comes out clean.
11. Remove pan from oven, and leave muffins to cool in pan for 10 minutes. Then transfer to a cooling rack and leave to cool.
12. Make the glaze by combining the icing sugar, milk and vanilla, whisking until smooth and creamy.
13. Drizzle over the muffins cooling on the wire rack. Enjoy!
