Mixed Berry Streusel Muffins


Prep time: 15 minutes
Bake time: 30-35 minutes ( may need a little longer depending on Oven)

 
Ingredients:
For the Muffins:
* 1/2cup Unsalted Butter
* 1 3/4cup Brown Sugar
* 1 Egg
* 1cup Buttermilk
* 2tsp Vanilla extract 
* 1tsp Baking Soda
* 1/2tsp Salt
* 2cups All Purpose Flour 
* 1cup Fresh or 3/4cup Dried Cranberries
* 1cup Fresh Blueberries
* 1/2cup Well chopped Pecans 

Note: If you choose to use dried cranberries the ratio is 1cup fresh = 3/4cup dried cranberries. If using dried cranberries, for best results, soak the dried cranberries in some water for 1/2hour prior to use. Drain water well prior to incorporating the cranberries into the mixture.  

For the Streusel topping:
* 1/2cup Granulated Sugar
* 1tsp Cinnamon powder 
* 1/2cup Pecans chopped fine or pulsed in food processor 

         


Directions:
1. Preheat oven to 325degrees. Prepare a 12 cup muffin pan + 2 muffins  (medium size) or a 6 cup muffin pan (large); Line with cupcake liners. 
Note you may find you have extra batter for 2 more muffins, therefore it is best to prepare a 12cup Muffin pan and a 6cup muffin pan as well.  

2. Using stand mixer with paddle attachment, or hand held mixer, combine the butter and brown sugar and mix until blended, and smooth. Add in buttermilk, egg and vanilla and mix well. 

3. In a separate bowl combine the flour, baking soda and salt and mix well to combine. 

4. Combine the dry ingredients with the wet ingredients in 2 batches, mixing well in between each addition, and scraping bowl to ensure all ingredients have been combined. 

5. Fold in the berries and pecans by hand. Fill the liners with batter (2/3 full). 

6. Combine the sugar, pecans and cinnamon in a bowl to make the streusel mixture. Top each muffin cup with a spoon of the streusel mixture. 

7. Bake at 325degrees for 30 minutes. Remove from oven when ready (inserted toothpick will come out clean). 

8. Leave on wire rack to cool in muffin pan, for 15 minutes. Then transfer to wire rack from the muffin pan and leave to cool longer.
