Lemon Blueberry Muffins
Ingredients:
Lemon Blueberry Muffins:
* 2 + 1/2cups All Purpose Flour
* 2 + 1/2cups All Purpose Flour
* 1/2cup Granulated Sugar
* 1/4cup Brown Sugar
* 2tsp Baking Powder
* 1/4tsp Baking Soda
* 1/2tsp Salt
* 1/3cup Buttermilk
* 1/2cup Vegetable Oil
* 2 Eggs
* 1tbsp Lemon Zest
* 2tbsp Fresh Lemon Juice
* 6tbsp Sour Cream
* 1 + 1/2tsp Vanilla Extract
* 1 + 1/2cups Blueberries
* 1tbsp All Purpose Flour
For the Crumb Cake Topping:
* 6tbsp Unsalted Butter, Melted
* 1/2cup Brown Sugar
* 2/3cup All Purpose Flour
* 1tsp Lemon Zest
For the Lemon Glaze:
* 1/2cup Confectioners Sugar
* 1tbsp Lemon Juice
Method/ Directions:
1. Preheat oven to 400degrees. Line muffin pan of your choice with liners. This recipe makes 6 large muffins or 12 medium size muffins.
2. Combine the flour, granulated sugar, brown sugar, salt, baking powder and baking soda in a bowl, and whisk together to combine. Set aside.
3. In a separate bowl combine the eggs, buttermilk, and vegetable oil. whisk well to combine. Make a well in the dry ingredients, and pour in the wet ingredients. Whisk well to combine.
4. Now add in the lemon zest, lemon juice, sour cream and vanilla extract, and whisk to combine.
5. First toss the blueberries in the tablespoon of flour and then add to the mixture, folding in gently.
6. Transfer batter to muffin cups (fill 2/3 of the liner).
7. In a separate bowl combine the lemon zest, flour and brown sugar. Then add in the melted butter, mixing with a fork until the crumble forms.
8. Sprinkle and press the crumbs down lightly into the top of each muffin. Bake at 400 degrees for 25-30 minutes if they are large muffins, or 16-18 minutes if medium size. The muffins are done when they are golden brown or when the inserted toothpick comes out clean.
9. To make the lemon glaze, combine the lemon juice and confectioners sugar, mixing well, until the consistency is just right to drizzle over the muffins. Let muffins cool for 20 minutes or so prior to drizzling the glaze over.
