Cookies n Cream Donuts
For the Donuts: Makes 16-18 Donuts
* 1 + 3/4cup All Purpose Flour
* 1cup Light Brown Sugar
* 2/3cup Cocoa Powder
* 1tsp Baking Powder
* 1tsp Baking Soda
* 3/4tsp Salt
* 2 Eggs
* 3/4cup Milk
* 2tsp Vanilla Extract
* 2tsp White Vinegar
* 1/2cup Unsalted Butter, melted and semi cooled
For the White Chocolate Ganache:
* 1 +1/2cups White Chocolate Chips
* 1/3cup Heavy Whipping Cream
For the Topping:
* 1/3cup - 1/2cup Crushed Oreo Cookies
Directions:
1. Preheat oven to 350degrees. Spray 2 donut pans with non-stick cooking spray. Set aside.
2. Combine the cocoa powder, flour, sugar, baking powder, baking soda and salt. Whisk together to combine.
3. In a separate bowl, combine the eggs, milk, vanilla and vinegar. Whisk together to combine.
4. Add the wet ingredients to the dry ingredients, together with the 1/2 cup of butter melted and slightly cooled.
5. Once fully combined, transfer the batter to a piping bag, and pipe into the donut molds. Fill only 3/4 full. Bake at 350degrees, for 12-15 minutes. Once baked, leave in pan (out of oven) to cool for 5 minutes, and then invert on to a wire rack to cool fully.
6. Once the donuts have cooled, make the chocolate ganache. To make the chocolate ganache, place white chocolate in a heat proof bowl.
7. Heat the cream in a pan, until the cream comes to boil (just as it starts to boil), take it off the heat, and pour it on the chocolate. Leave for 5-10 seconds. Using a whisk, whisk the mixture well until fully melted and creamy smooth. Leave to cool to room temperature.
8. Dip the Donuts in the chocolate ganache, and leave to dry on the wire rack.
Optional: The darker Donuts have just one layer of the glaze. The whiter ones have a thicker layer of chocolate glaze. You can decide what you prefer.
9. Sprinkle the Oreos crushed while the ganache is still wet. Leave to dry.
