Strawberry Cream Cheese Filled Donuts
Prep time: 2hours + 15 minutes
No baking time.
Ingredients:
For the Donuts:
* 1 envelope dry active yeast
* 2tbsp Warm Water
* 3 + 1/4cups All Purpose Flour
* 1cup Milk
* 1/4cup Unsalted Butter at room temperature
* 3 Egg yolks
* 4tbsp Granulated Sugar
* Oil for Frying
* 2cups Sugar for rolling donuts in
For the Filling:
* 3cups Sliced Strawberries
* 1/2cup Granulated Sugar
* 1 + 1/2tbsp Water
* 16oz Cream Cheese softened to room temperature
* 1/2cup Confectioners Sugar
* 2tbsp Strawberry Jam
Directions:
1. Combine the yeast and warm water in a bowl. Set aside.
2. In the bowl of a stand mixer (with a dough hook), combine the flour, milk, butter, egg yolks, sugar and yeast mixture. Mix on low speed until combined and a ball of dough forms, away from the walls of the bowl.
3. Place the ball of dough on to a floured surface, and knead the dough. Then place the dough into a bowl, greased with olive oil. Cover with a towel, and leave for 90 minutes, in a semi-warm place for the dough to rise.
4. Once the dough has risen, turn it on to a floured surface, and separate it into 12-14 individual balls. Place each ball onto a baking sheet (covered with parchment and floured lightly). Once finished, cover the baking sheet with a kitchen towel and leave for the dough to rise more. Leave it for 30 minutes.
5. When ready fry the donut dough balls (3-4 at a time)in hot oil, turning them over so that they fry evenly. Place them on a plate lined with paper towels so as to absorb any excess oil.
6. Once oil has drained, place each donut in a bowl with the sugar and coat evenly.
7. Make the filling, while the donut dough is left to rise. The filling can be made ahead of time and refrigerated until used. To make the filling, combine the strawberries, sugar and water in a pan and bring to a simmer on medium heat. Once simmering, reduce heat to low-medium and leave it to simmer for a further 10 minutes. Take it off the heat and leave to cool.
8. Combine the cream cheese, confectioners sugar and jam in the bowl of a stand mixer, with whisk attachment, and whisk on low to combine. Then turn beater to high and whisk until mixture gets creamy, and thick. Add a generous cup of the cooled strawberry mixture, and mix until fully combined.
9. Once the donuts are ready and coated with the sugar, using the tip of a knife, poke a hole on the side of each donut (enough for the piping tip to be placed in).
10. Transfer the strawberry filling into a piping bag fitted with a nozzle of your choice. Fill each donut with some strawberry filling. Enjoy!
