Baked Pumpkin Spice Donuts


Prep time: 10 minutes 
Bake time: 12 minutes + cooling time 

Ingredients: (Makes 6 Donuts)
Donuts:
* 1cup All Purpose Flour
* 1tsp Baking Powder 
* 1tsp Pumpkin Pie Spice
* 1/4tsp Nutmeg
* 1/4tsp Salt 
* 1/3cup Pumpkin Puree
* 1/3cup Brown Sugar 
* 1/4cup Milk
* 1Egg at room temperature 
* 2tbsp Unsalted Butter (melted, and cooled)
* 1tsp Vanilla Extract 

Frosting:
* 1/4cup Unsalted Butter at room temperature
* 4oz Creamcheese 
* 1/2tsp Ground Cinnamon
* 1/2tsp Pumpkin spice 
* 1/4tsp Nutmeg
* 1cup Confectioners Sugar
* 2-4tbsp Whipping Cream, as needed

*Pumpkin spice or sprinkles of your choice



Directions:
1. Preheat oven to 350degrees F. Prepare a donut pan (6 donut count)with cooking spray and set aside. 

2. Combine the flour, pumpkin pie spice, baking powder, salt and nutmeg in a bowl, and whisk together. Set aside. 

3. Using a stand mixer with paddle attachment, whisk together the pumpkin, brown sugar, egg, milk, vanilla and butter until fully combined, and smooth. Add the flour mixture to the stand mixer and mix until just combined. 

4. Transfer the batter to a piping bag, and pipe the batter into the donut pan. 

5. Bake at 350degrees for 10-12 minutes, or until the inserted toothpick comes out smooth. Remove from oven and leave to cool in the pan for about 5 minutes, and then transfer them to a wire rack to cool. 

6. To make the frosting, mix together the creeam cheese and butter, until well blended. Add the confectioners sugar, pumpkin spice, nutmeg and cinnamon powder, and whipping cream as needed. Mix well, using stand mixer or hand whisk. 

7. Dip one side of the donut in the glaze, and remove using a fork. Leave on wire rack to dry. The glaze will take 15-20 minutes to dry. Add on the sprinkles for a halloween feel, or sprinkle with pumpkin spice. Enjoy!
