Apple Fritters


Prep time: 15 minutes
Cook time: 15 minutes

Ingredients: 
* 1cup All Purpose Flour
* 2tsp Baking Powder
* 1/2tsp Cinnamon Powder
* 1/2tsp salt
* 2tsp Fresh Lemon Juice 
* 2-3cups Granny Smith Apples (peeled, cored and diced)
* 2tbsp Granulated Sugar 
* 2 Eggs at room temperature 
* 1/4cup Whole Milk 
* Oil for frying (canola or vegetable)

For the Glaze:
* 1 1/4cup Confectioners Sugar 
* 1/4tsp Vanilla 
* 3-6tsp Water 



Directions:
1. Combine the flour, baking powder, salt and cinnamon in a bowl, whisk together and set aside. 

2. In another bowl combine the apples and lemon juice and set aside. 

3. Using a stand mixer with paddle attachment, whisk the eggs and sugar together. on medium speed until combined. Reduce the speed to low and add in the flour in two batches, mixing until just combined. 

4. Add in the milk and beat to combine. Fold in the apples. 

5. Fill a frying pan 1/2full with oil, and heat on medium. Ensure the oil is sufficiently heated prior to dropping in the apple fritter batter. Drop in a 1/4cup of the batter into the oil and fry until golden. Flip the fritter and cook the other side. Check the first fritter to ensure its done by inserting a knife into the center. If the dough feels uncooked, fry the fritter for a little longer. This will give you an idea of how long to fry the fritters. 




6. Place the fritters on paper towels to soak up excess oil, prior to transferring them to a wire rack to cool. 

7. To make the glaze, combine the sugar, vanilla nd water in a bowl, and whisk well. Should the mixture be too thick, add in water, 1tbsp at a time, until the mixture can be drizzled. Drizzle the glaze on the fritters, once they have cooled, and leave them to dry. 

Enjoy! Can be stored in an airtight container for up to 3 days.
