Chocolate Glazed Donuts
Ingredients:
* 2 1/2cups All Purpose Flour
* 1/3cup Cocoa Powder
* 1/2cup Unsalted Butter at room temperature
* 1 1/2tsp Baking powder
* 1/4tsp Baking Soda
* 1/8tsp Nutmeg
* 3/4tsp Salt
* 1/2cup Granulated Sugar
* 1/4cup Brown Sugar
* 2 Eggs at room temperature
* 1tsp Vanilla extract
* 1cup Milk
For the Glaze:
* 2cups Semi-sweet Chocolate
* 3-4tbsp Whipping Cream
* 2tsp Vanilla Extract
* Sprinkles of your choice for garnish
Method:
1. Pre heat oven to 425degrees. Grease 2 donut pans with baking spray.
2. Combine flour, cocoa powder, baking powder, baking soda, nutmeg and salt in a medium bowl, and whisk together to combine. Set aside.
3. Using a stand mixer (with paddle attachment) or an electric hand beater, beat butter, brown sugar and white sugar, until light and fluffy.
4. Add in eggs and vanilla (mixer on medium) until combined.
5. Add flour mixture in two batches, alternating with the milk (beater on low speed). Scraping sides of bowl ensuring all ingredients are combined. Do not over mix.
6. Transfer the batter to a piping bag. Using piping bag, pipe the batter into the prepared pans. Make sure the tip of the piping bag is cut narrow, or else you will pipe too much batter in each donut mold. Tap pans on the counter a few times to ensure any air bubbles are all released.
7. Bake at 425degrees for 12-15 minutes. Leave to cool for 10-15 minutes in the pan, and then transfer the donuts onto a wire rack to cool further.

8. In a medium size bowl ( a bowl you can dip the donuts into), combine the chocolate chips and whipping cream. Heat at 20 second intervals, and then whisk well until smooth. Add in the vanilla extract, whisking well to combine. Whisk until mixture becomes smooth, and glaze-like. Ensure the glaze is not too thin.
9. Dip one side of the donut in the glaze or alternately pour the glaze over the donuts as they sit on the wire rack. As in photo below.
10. You can sprinkle on sprinkles of your choosing or some sweet shredded coconut, or leave the donuts with just the chocolate glaze.

These Cake Donuts are quick to make and delicious! Best yet.. they are not fried, for those of you who don't enjoy deep fried desserts.
