Lemon Poppyseed Loaf


Prep time: 15 minutes
Baking time: 1 hour

Ingredients:
* 1 + 3/4cup All Purpose Flour
* 1tbsp Poppy Seeds 
* 2tsp Baking Powder
* 1/2cup Unsalted Butter at room temperature 
* 1 + 1/4cups Granulated Sugar 
* the zest of 3 Lemons
* 3 Eggs
* 1/2cup Lemon Juice 
* 1/4cup Milk 
For the Glaze:
* 1/2cup Confectioners Sugar '
* 2-3tbsp Lemon Juice 
* 1tsp Vanilla Extract 


Directions:
1. Preheat oven to 350degrees, and line a loaf pan with parchment paper. Lightly spray the parchment paper with cooking spray. 

2. Combine the flour, poppy seeds and baking powder in a bowl, and whisk to combine. 

3. Using the bowl of a stand mixer (with paddle attachment) beat the butter, sugar and lemon zest. Add the eggs one at a time and beat until smooth. 

4. Add in the dry ingredients alternating with the milk and lemon juice to the mixture in the bowl. Beat until just combined. 

5. Pour the batter into the prepared loaf pan. Bake at 350 degrees for 1 hour. Once inserted tooth pick comes out clean the loaf is done. 

6. Leave the loaf on a wire rack to cool fully. 

7. Make the glaze by combining the confectioners sugar, vanilla and lemon juice in a bowl, and mix well. Pour the glaze over the cooled loaf. Leave the loaf to set for awhile. Enjoy!
