Lemon Ice Loaf


Prep time: 20 minutes
Bake time: 40-50 minutes

Ingredients:
For the Loaf:
* 1 1/2cups All Purpose Flour
* 1 1/2tsp Baking Powder
* 1tbsp Lemon Zest 
* 1/2tsp Salt 
* 1/2cup Unsalted Butter at room temperature 
* 1cup Granulated Sugar
* 2 Eggs at room temperature  
* 1tsp Vanilla Extract 
* 2tbsp Lemon Juice 
* 1/2cup Buttermilk

For the Lemon Syrup:
* 1/4cup Lemon Juice 
* 3tbsp Confectioners Sugar 

For the Lemon Ice:
* 1cup Confectioners Sugar 
* 1 1/2tbsp Lemon Juice 
* 1tbsp Milk



Directions:
1. Pre-heat oven to 350degrees. Grease a loaf pan (9" x 5").

2. Combine the flour, baking powder, salt and lemon zest in a bowl, and whisk together. Set aside. 

3. Using a stand mixer, fitted with paddle attachment, whisk the butter and sugar together, on medium-high. Beat together, scraping the sides and bottom of the bowl from time to time, for approximately 4-5minutes. 

4. Add in the eggs one at a time, and then add in vanilla extract and lemon juice, beating on medium speed, until combined. 

5. Add in the flour mix and the buttermilk, alternating between dry and wet ingredients. Start with dry and end with dry (flour mix 1/3, buttermilk 1/2, flour mix 1/3, buttermilk 1/2, and flour mix 1/3). 

6. Once combined, scrape the batter into the loaf pan. Bake at 350degrees, for 45-50 minutes (depending on your oven). The loaf is done when an inserted toothpick comes our semi-clean. 

7. Once baked, take the loaf out of the oven, and leave to cool for about 15 minutes in the pan. Once semi-cooled, invert cake onto a wire rack and leave to cool. 

8. While loaf is still warm, combine the lemon juice and confectioners sugar for the lemon syrup, in a bowl. Brush it over the loaf while still warm, and leave to cool. 

9. Once the loaf has completely cooled, combine the confectioners sugar, lemon juice and milk (start with 1tbsp of the lemon juice and 1tbsp of the milk, and add in more as needed). Pour the icing over the loaf and leave to set.
