Strawberry Creamcheese Chocolate Swiss Roll
Ingredients:
For the Cake:
* 4 Eggs, seperated
* 1/2cup Granulated Sugar + 1/3cup Sugar (measured seperately)
* 1tsp Vanilla Extract
* 1/2cup All Purpose Flour
* 1/3cup Cocoa Powder
* 1/2tsp Baking Powder
* 1/4tsp Baking Soda
* A Pinch of Salt
* 1/3cup Water
For the Filling:
* 1 + 1/2cup Strawberries (fresh) diced
* 1-2tbsp Water + 1tbsp Granulated Sugar
* 3/4pkg (6oz) Creamcheese at room temperature
* 1/2tsp Vanilla Extract
* A Pinch of Salt
* 1cup Confectioners Sugar
* 1cup Whipping Cream
* 1cup Strawberries sliced (to place over the filling)
For the Topping:
* Remaining whipped cream
* Strawberries cut into quarters or halves
* Confectioners Sugar for dusting (optional)
* 1cup Semi sweet Chocolate Chips + 2tbsp Whipping Cream
For Serving:
* Remaining Filling Mixture
Directions:
- Preheat oven to 350degrees. Line a 10×15 inch baking pan with parchment paper and grease with cooking spray.
- In a mixing bowl, beat the egg whites using an electric hand mixer until soft peaks form. Add ½ cup sugar while beating and continue to beat until stiff peaks form.
- In a bowl of a stand mixer with the whisk attachment, beat egg yolks on medium speed for about 3 minutes, add the ⅓ cup sugar and vanilla and beat a few more minutes.
- In a separate bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt together. Alternately add flour mix and the ⅓ cup water to the egg yolk mixture in the stand mixer. Scrape the sides and bottom of the bowl as you go.
- Next fold the chocolate batter into the egg whites in 2-3 batches. Fold until combined fully.
- Spread batter into the prepared baking pan, tap pan twice on the counter to remove any remaining air bubbles, and bake for 15 minutes until toothpick comes back clean.
- Once cake is done, you will invert the cake on to a dish towel. To do this first ensure the cake is loosened from the baking tray (you can use the parchment to lift it up to check). Dust the cake with confectioners sugar. Then place the dish towel over the sugar dusted cake. Then place a cutting board over the towel. Quickly turn the cake over. Place it on the counter.
- Remove the parchment paper gently. Using the dish towel, roll the cake somewhat tightly, and leave it to cool for 20 minutes or so. After 20 minutes unroll the cake and leave it to cool further.
- While the cake is baking, add the cut strawberries to a pan with 1tbsp water and 1tbsp sugar. Bring to a boil and let it simmer for 4-6 minutes. Leave it to cool. Once fully cooled, puree the mixture fully. Leave to cool further.
- Using the stand mixer with whisk attachment, beat the whipping cream with 1/4cup confectioners sugar, until stiff peaks form. Transfer to another bowl and leave it to chill in the refrigerator.
- Add the cream cheese, vanilla, salt, the strawberry puree, and 3/4cup confectioners sugar to the same bowl of the stand mixer and beat until creamy and smooth.
- Fold in 3/4 of the whipped cream into the cream cheese mixture. Place in the refrigerator to chill for 15 minutes.
- While the mixture chills, slice the cup of strawberries and set aside.
- Unfold the cake (leave for 10 minutes to cool) and spread the cream cheese mixture generously over it (leave an 1 inch space between mixture and edges). Add on the slices of strawberry. Then roll it back the way it was before (make it as tight as possible). Note: any remaining creamcheese can be set aside to add a dollop on as you serve the slices.
- Cover the roll with saran wrap, and place in refrigerator to chill for 3 - 4 hours. You can also place it in the freezer for 1-2 hours.
- Once ready, remove saran wrap, place the roll on a serving plate. Cut the edges with a serrated knife. Make the chocolate ganache by combining the chocolate chips and cream in a heat proof bowl, and microwave for 20 seconds, two or three times. Whsik the mixture until smooth. Pour the ganache over the roll. Leave it in the refrigerator to chill for 10 minutes.
- Once the ganache has set, take it out of the refrigerator, add on remaining whipped cream on the top, and add on cut strawberries. Serve and enjoy!
- To serve, you can cut slices, add on a dollop of the creamcheese mixture, add some sliced strawberries and serve.
