Nutella No-Bake Cheesecake

Time to Set: 6-8hrs (Overnight)
Yield: 12-14 slices
What You will Need:
For the Base/ Oreo Crust:
3Cups Oreo Crumbs
5tbsp Unsalted Butter, melted
1tbsp Sugar
For the Nutella Cheesecake:
3pkgs (8oz each) of Creamcheese, at room temperature
1/2cup Granulated Sugar
1+ 1/2cups Nutella
3tbsp Unsweetened Cocoa Powder
1 + 1/4cup Whipping Cream
1/2cup Powdered Sugar (Icing Sugar)
1tsp Vanilla Extract
For the Garnish:
Ganache:
1/2cup Nutella
2tbsp Semi-sweet Chocolate Chips
1/4cup Whipping Cream
Topping:
Ferrero Roche Chocolates
Method:
1. Line a 9inch springform pan with parchment paper on the bottom, and grease sides.
2. Combine the oreo crumbs, sugar and melted butter in a bowl, and mix with a fork until the ingredients have been combined. Transfer to the springform pan, and press down making a crust; press the crust up the sides as well, creating a semi wall of crust. Place in refrigerator to chill for 1 hour.
3. While the crust is chilling, make the cheesecake mixture. To start, combine the creamcheese and sugar together, and whip (use an electric mixer for best results). Once combined, add in the nutella and mix again until smooth and combined. Scrape the sides and bottom of the mixing bowl with a rubber spatula, to ensure everything is combined evenly. Add in the cocoa powder and mix well.
4. In a separate bowl, combine the whipping cream, icing sugar and vanilla, and whip on medium-high, using an electric mixer. Whip until stiff peaks form.
5. Fold the whipped cream (in 2 batches), into the creamcheese mixture, taking care to fold gently.
6. Pour the filling into the springform pan, over the crust, fully, and gently covering the crust, evenly. Place in refrigertor to chill for 6-8hrs, or overnight.
7. When ready to serve, combine the chocolate chips and cream in a bowl, with the nutella, and warm in 15second bursts, in the microwave; take care to mix in between.
8. To put the cheesecake together, remove cake gently from the springform pan, and place it on a serving plate. Drizzle the ganache over the cake, and place the ferrero roche chocolates around the cake or chop them up and sprinkle over the cake. Serve imideatly. Leave in refrigerator, in between servings, as the cheesecake will melt.
