Peanutbutter Brownies


Ingredients:
* 400g Peanutbutter
* 3/4cup+ 2tbsp Unsalted Butter 
* 1 + 1/4cups Semi-sweet Chocolate Chips 
* 1cup Granulated Sugar 
* 3 Eggs
* 1tsp Vanilla Extract 
* 1/2cup All Purpose Flour
* 1/4cup Cocoa Powder
* Pinch of Salt


Directions:
1. Using a 8"X8" square baking pan, line it with foil with some overhand left over the sides. Spread the peanutbutter in the pan and the place the pan in the freezer for 2 hours. 

2. After an hour, remove the foil from the pan and leave in freezer to chill while you prepare the brownie mixture.  

3. Line the same baking pan again with parchment paper, and grease it using cooking spray. Set aside. 

4. Place the semi-sweet chocolate and the butter in a heat proof bowl. Microwave for 15 seconds, 3 -4 times. Using a hand whisk, mix the butter and chocolate together well. Pour the mixture into the bowl of a stand mixer (fitted with paddle attachment). 

5. Add the vanilla and sugar and mix well. Ensuring the mixture has cooled, add in the eggs one at a time, mixing in between each addition. 

6. Combine the flour, salt and cocoa powder in a bowl, mixing well. Add in the flour mixture to the wet ingredients and beat just enough to combine. Pre-heat oven to 350degrees.

7. Transfer half the mixture to the prepared baking tray. Take out the Peanutbutter from the freezer. Peel away the foil, and place the slab of Peanutbutter on the brownie mixture spread at the bottom of the baking dish. Then pour the remaining brownie mixture over the Peanutbutter slab. 

8. Bake at 350degrees for 35 minutes. Once done, remove the pan from the oven and leave it to cool for 30 minutes. Then lift it out using the overhang and leave to cool for another 30-45 minutes. Cut and serve. 
Note: Should the peanutbutter be melting when you cut the brownies, leave the tray in the fridge for 10-20 minutes to chill before cutting.
