Cranberry Loaf
Ingredients:
1/3cup Unsalted Butter (room temp.)
1cup Granulated Sugar
1tsp Vanilla Extract
2 Eggs
1 + 1/2cups Cake Flour
1tsp Baking Powder
1/2tsp Salt
3/4cup Milk (whole or 2%)
2cups Cranberries Fresh or Frozen
Directions:
1. Preheat oven to 350degrees F. Grease a loaf pan and set aside.
2. Using a stand mixer with paddle attachment, beat the butter and sugar together. Once combined, and smooth (use a rubber spatula to scrape the sides of the bowl), add in the vanilla, and mix. Then add in the eggs one at a time, beating on low, thoroughly until mixed.
3. Combine the flour, salt and baking powder in a separate bowl, and mix using a whisk.
4. Add the flour mixture and the milk in alternating batches to the mixture in the stand mixer. Start with dry and end with dry ingredients (1/3dry, 1/2milk, 1/3dry, 1/2milk, and 1/3dry). Mix on medium low until fully combined.
5. Fold in the cranberries by hand with a rubber spatula. Pour the cake mixture into the loaf pan. Bake at 350 degrees for 1 hour. Leave on a wire rack to cool, once baked.
6. Makes 8-10 servings. Slice and enjoy.
