Skillet Focacia Bread


Ingredients:
For the Dough:
* 2 + 1/2cups All Purpose Flour 
* 1cup Warm Water 
* 1 + 1/2tsp Dry Active Yeast
* 2tsps Sugar
* 1/2tsp Salt 
* 3tbsps Olive Oil (extra virgin)

For the Topping:
* 1/4cup Sliced Black Olives
* Sliced Cherry Tomatoes 
* 1-2 Sprigs Fresh Rosemary 
* 3-4 Thinly sliced, Zucchini 
* 3-4 Rings of thinly sliced, Red Onion
* 2-4 slices of Jalapeno Pepper  
* 1/4tsp Salt (for sprinkling over)



Directions:
1. Combine the warm water and yeast in a large bowl, and mix well. Add in the sugar and whisk. Leave for 2-3 minutes, until foamy. 

2. Add the flour, salt and olive oil to the bowl, and mix well using a spatula; knead for a minute or so using hands. Brush the top of the dough with some olive oil. Close the bowl with a kitchen towel, and leave in area that is draft free, for approximately 2 hours until it rises (or doubles in size). 

3. Grease a 10" cast iron skillet. Place the focacia dough in the skillet, and spread the dough inside up to the edges of the skillet. Lightly drizzle olive oil over the dough, and press in the toppings. Drizzle a little more olive oil over and sprinkle with sea salt.  Cover with a kitchen towel, and leave for 20-30 minutes, to rise. 

4. Preheat oven to 400degrees F. Bake at 400degrees F. for 35 minutes. Leave on a wire rack to cool (in skillet).  

5. Slice and serve, with a dip of your choice.
