Pecan Caramel Chocolate Bites


Ingredients:
* 1 cup Pecans (chopped)
* 2-3tbsps Salted Butter
* 2 cups Soft Caramels 
* 3tbsp Cream 
* 1 + 1/2cups Semi Sweet Chocolate 
* 1tbsp Coconut Oil
* 1-2tsps Sea Salt Flakes 



Directions:
1. Add 2tbsps Salted Butter to a pan, and bring to a melt. Add in the chopped pecans and toast the pecans. Take off heat and leave to cool. 

2. Line a baking tray with parchment or wax paper. Make small piles of the pecan pieces on the baking tray. 

3. Add the caramels and cream to a bowl and heat at 20 second intervals (in the microwave). Mix well with a fork until the caramel is melted and smooth. 

4. Pour a spoonful (or two) over each mound of pecans. Leave in refrigerator to chill. 

5. Combine the chocolate chips and coconut oil in a bowl, and heat in the microwave at 20 second intervals. Mix well, until smooth and combined. 

6. Once the caramel sets over the pecan mounds, pour a spoon or two of the chocolate over the caramel. Sprinkle sea salt over the chocolate. Leave to set in the refrigerator. 
Once set, you can remove them off the parchment paper and enjoy. 

Best stored in an airtight container in refrigertaor.
