Carrot Cake Loaf
Ingredients:
* 2cups All Purpose Flour
* 1/2tsp Salt
* 2tsps Baking Powder
* 2tsps Baking Soda
* 2tsps Ground Cinnamon
* 1/4tsp Ground Ginger
* 1/4tsp Ground Nutmeg
* 4 Eggs
* 1/2cup Vegetable Oil
* 1/2 Cup Sweetened Applesauce
* 1tbsp Vanilla Extract
* 1 + 1/4cup Brown Sugar
* 1/4cup Granulated Sugar
* 2cups Shredded Carrot
For the Glaze:
* 8oz Creamcheese at room temperature
* 1/2cup Unsalted Butter, at room temperature
* 2 + 1/2cups Confectioners Sugar
* 1tsp Vanilla Extract
* 1/4tsp Salt
Directions:
1. Preheat oven to 350degrees F. Grease a loaf pan with cooking spray or melted butter.
2. Combine the flour, salt, baking powder, baking soda, nutmeg, cinnamon, and ginger in a bowl, and whisk to combine. Set aside.
3. In a stand mixer with a paddle attachment, beat the eggs on low, until just combined. Then add in the vanilla, oil, both sugars and applesauce. Mix on low until everything is blended.
4. Add in the dry ingredients and mix with a spatula folding it in. Then add in the carrots and fold it into the mixture.
5. Transfer the mixture to the prepared loaf pan. Bake at 350degrees for 40-50 minutes. The loaf cake is ready when an inserted toothpick comes out clean.
6. Leave on a wire rack to cool. Once semi cooled, invert on to the wire rack to cool fully.
7. To make the frosting, combine the creamcheese and butter and whisk on medium speed. Add in the confectioners sugar one cup at a time. Whisk inbetween additions, Add in the vanilla and salt and beat well.
8. Once the carrot loaf cake has cooled, frost it with the creamcheese frosting. Leave to rest for awhile. Cut and serve.
