Strawberry Loaf Cake


Ingredients:
For the Loaf:
* 1 + 1/2cups All Purpose Flour
* 1/2cup Cake Flour (spooned and measured)
* 1/4tsp Salt 
* 1tsp Baking Soda
* 1/8tsp Cinnamon Ground  
* 1cup Buttermilk 
* 1 Egg 
* 3/4 Granulated Sugar 
* 1/4cup Brown Sugar 
* 1/3cup Oil
* 2tsp Vanilla Extract 
* 1 + 1/2cups Strawberries, washed and cut 
* 1tbsp Flour 

For the Icing:
* 1cup Confectioners Sugar 
* 2tsp Vanilla Extract 
* 3-4tbsp Whipping Cream 



Directions:
1. Grease a 10" loaf pan with cooking or baking spray. Pre-heat oven to 350degrees F. 

2. Combine the flour, baking soda, salt and cinnamon in a bowl and whisk to combine. 

3. Beat the egg, and sugars together ensuring the mixture is smooth and fluffy. Add the buttermilk, oil and vanilla to the egg mixture and whisk with a hand whisk until fully incorporated and smooth (no lumps). 

4. Combine the strawberries with the 1tbsp of flour, using a fork, in a separate bowl. 

5. Add the egg/butermilk mixture to the dry ingredients (Flour mixture) and whisk using a hand whisk. Do not overbeat, and mix just enough to ensure the mixture is well incorporated and smooth. Fold in the strawberries with a spatula. 

6. Pour the mixture into the prepared pan. Bake at 350degrees, for 55 minutes. The loaf cake is ready when an inserted tooth pick comes out clean. For best results cover the loaf with tin foil very lightly around the 45 minute mark. This will prevent the loaf from browning too much on top. 

7. Once baked, place the loaf cake on a wire rack to cool. Once semi cooled, invert the cake on to the wire rack and let cool fully. 

8. To make the glaze, mix the confectioners sugar, vanilla and whipping cream in a bowl, until smooth and at the right consistency to pour. 

9. Once the loaf cake has cooled fully, pour the glaze over. Leave for 30 minutes to set. Cut and serve.
