Stone baked Peach Cobbler


Ingredients:
* 5 Peaches, sliced
* 1/2cup Granulated Sugar
* 1/4cup Brown Sugar
* 1tsp Lemon Juice, freshly squeezed
* 1cup All Purpose Flour
* 1/2cup Granulated Sugar
* 1/2tsp Salt 
* 1tbsp Baking Powder 
* 1tbsp Vanilla extract 
* 4tbsp Unsalted Butter, melted and cooled 
* 3/4cup Milk 

To Serve:
* Vanilla Ice Cream 
* Mint leaves to garnish


Directions:
1. Cut up the peaches into slices (remove pits). Place the slices in a bowl. Add in the brown sugar and granulated sugar and lemon juice, and mix using your hand, very lightly. 

2. Preheat oven to 375degrees F. You can use a glass square dish, or a stone dish. 

3. Transfer the peache mixture to the dish of your choice. Spread evenly at the bottom of the dish. Bake for 10 minutes at 375degrees. Take out of oven when done, and leave on a wire rack until your topping mixture is ready. 

4. To make the topping combine the flour, salt, sugar, baking powder and mix with a hand whisk. Add in the melted butter, milk and vanilla extract and mix. 

5. Pour the mixture evenly over the peaches. Bake at 375 degrees for 25-30 minutes. Once the topping is crispy and golden brown, the cobbler is ready. Leave to cool for 5 minutes, and serve with vanilla ice cream. 
Note: If you are serving from the oven to the table, you can garnish with mint prior to serving.
