The Creamy Crunchy Potato Salad



Ingredients: 
* 8-10 Potatoes, peeled, boiled and chopped into into small cubes (feeds 10 people)
* 3 Stalks of Celery, chopped finely  
* 2 Bunches of Spring Onions, chopped finely 
* 6 Hard Boiled Eggs, chopped into small pieces 
* 1/2cup Red Onion, chopped finely 
* 2cups Mayonnaise
* 2-3tbsps White Vinegar 
* Salt and Pepper to taste 
* 2-3tsp Honey Dijon Mustard 
* 1-2tsps Paprika 
* Chives for garnishing 

Directions:
1. Combine the cut potatoes, celery, spring onions, and red onions in a bowl. 

2. Combine the mayonnaise, vinegar, salt and pepper, and mustard in a separate bowl. Mix well to combine.

3. Add the dressing to the potato mixture and mix lightly. Add the half the paprika and all of teh eggs next and mix very lightly. Finally add the balance of the paprika and mix well, but gently so as not to squash the potato and egg.   

4. Garnish with Chives. Enjoy. 
Note: Best served chilled for a half hour.
