Parmeson Pretzels


Ingredients: Makes 12 Pretzels. 
* 1 + 1/2cups Lukewarm Water
* 2 + 1/4tsps Dry Yeast
* 1tsp Salt 
* 1tbsp Brown Sugar 
* 1tbsp Unsalted Butter, melted and cooled 
* 3-4cups All Purpose Flour, spooned and leveled
* 1/2cup Baking Soda 
* 8 + 1/2 - 9cups Water 
* Parmeson Cheese
* 1/2cup Salted Butter, melted 



Directions:
1. Add the yeast to the lukewarm water, and leave for 1 minute. Use the bowl of the stand mixer (with hook attchment). Line 2 baking sheets with parchment paper, and grease with baking spray.  

2. Add in the salt, sugar and melted butter and mix with dough hook. 

3. Add in 3cups of Flour, until dough becomes thick. Then add in 1/2-3/4cup more flour until the dough is not sticky. 
Note: if it is still sticky add a little more flour. 

4. Once the dough is no longer sticky and has a bounce back when poked, turn it on to a floured surface. Knead dough for 2-3 minutes. 

5. Once kneaded into the shape of a ball, cover the dough with a kitchen towel, lightly, and allow to rest for 10 minutes. 

6. While the dough is resting bring the baking soda and water to boil. 

7. After 10 minutes of resting, cut the dough into 12 sections. Roll out each section into a long rope, and twist the dough into a pretzel shape. Preheat oven to 400degrees F.

8. Soak the pretzels (2 at a time) for 20 seconds only. Using a slotted spoon lift the pretzels out of the water. Let as much excess water drain out before placing the pretzels on the parchment paper. 

9. Bake at 400degrees F., for 12-15 minutes. 

10. Once baked, dip the top of each pretzel in the melted butter and place on a wire rack for the excess butter to drip off. Sprinkle Parmeson cheese over. Enjoy!
