Mascarpone Cream Tarts
This is truly the simplest dessert you can make .. also .. so refreshing, light and fruity, it will become your go-to dessert!
Ingredients you will need: Makes 4 Tarts
For the Crust:
* 2cups Graham Cracker Crumbs
* 2tbsps Brown Sugar
* 1/4cup Unsalted Butter, melted
For the Cream Filling:
* 2cups Whipping Cream
* 2tsps Vanilla Extract
* 1/2cup Mascarpone Cheese
* 1/4tsp Salt
* 4tbsps Confectioners Sugar
Top the Tart with:
* Any fruit of your choice
1. Combine the graham cracker crumbs, briwn sugar and half the melted butter. Mix well with a fork. Add in the rest of the melyted butter as needed, until the crumbs become a grainy-texture.
2. Grease the tart pans with baking spray. Heat the oven to 350degrees F. Transfer the graham crumb mixture to the tart pans, and press it in using the back of a spoon. Bake at 350degrees for 15-18 minutes. Leave on a wire rack to cool fully.
3. To make the cream filling, beat the whipping cream in a stand mixer (with whisk attachment), on medium to high speed. Add in the vanilla and confectioners sugar, and whisk on medium-high. Beat for 2 minutes, then add in the mascarpone and salt and beat on high for a minute until stiff peaks form.
4. Cut up the fruit of your choice. Transfer the cream filling to a piping bag and pipe it into the cooled tarts (leave the tart shells in the tart pans). Add the fruit on top.
5. Chill the tarts (in pans) in the refrigerator for 2 hours. Serve and enjoy!
