Chewy Peanutbutter Cookies
Ingredients:
* 1cup Unsalted Butter, melted
* 1cup Granulated Sugar
* 1cup Brown Sugar
* 2 Eggs
* 2 + 2/3cups All Purpose Flour
* 1cup Peanut Butter (smooth)
* 1tbsp Vanilla Extract
* 1/8tsp Almond Extract
* 1tsp Baking Soda
* 1/2tsp Salt
* 1/2cup Roasted Peanuts
Directions:
1. Add the melted butter to a large bowl. Add in the granulated sugar and brown sugar to the bowl, and mix using a hand whisk until just combined.
2. Add in the peanut butter, vanilla and almond extract and mix until just combined. Add in the eggs one at a time and mix until just incorporated.
3. Add in the baking soda and salt and mix until combined. Then add in the flour and mix with hand whisk until just combined. Do not overmix.
4. Line two baking sheets with parchment paper, and spray with baking spray.
5. Cover the peanutbutter cookie mixture with saran wrap and leave in refrigerator for 30 minutes to chill.
6. Preheat oven to 325degrees. Scoop the cookie dough in balls onto the cookie sheets, with a few inches inbetween each ball. Bake at 325degrees for 9-10minutes. Take out of the oven (you will find the dough is only 3/4 cooked), and press in the peanuts into the soft dough. Leave to cool on the cookie sheets - the dough will cook more as it sits on the warm cookie sheets.
7. Once cooled the cookies will be firmer, but chewy. Once fully cooled place them in an air tight container. Enjoy!
