Tabbouleh Salad


This salad of Lebenese origin, is one of my all time favorite Salads! There are quite a few variations of it either using Bulgar or Quinoa. This version uses Quinoa, and I hope you love it as much as I do. 

Ingredients:
* 2 Bunches of Parsley 
* 1/2cup Mint
* 1/2cup Red Onion 
* 1 Tomato or 1 cup of Cherry Tomatoes 
* 1/2 Cucumber 
* 2cups Quinoa cooked 
* Lemon juice from 2 lemons
* 2tbsp of Cider Vinegar 
* 1/4cup Olive Oil 
* Salt and Pepper to taste

Directions:
1. Cut the parsley and mint very finely, and add to the salad bowl. 

2. Cut the tomato, cucumber and red onion finely, and add to the salad bowl. Add in the quinoa at this time. 

3. Add in lemon juice, olive oil and cider vinegar, salt and pepper at this time, and toss the salad. Serve and enjoy!
