Mini Berry Galettes
Ingredients:
* 3 Sheets of Pie Dough
* 1cup Raspberries
* 1 + 1/2cups Strawberries
* 1cup Blueberries
* 3tbsps each Brown Sugar (9tbsps total)
* 2tbsps each Honey (6tbsps total)
* 3tsps Vanilla Extract
* 1/2tsp Nutmeg each (1 1/2tsps total)
* 1/2tsp Cinnamon each (1 1/2tsps total)
* 4tsbps Granulated Sugar
* 1/2cup Raspberry or Strawberry Jam
* 3tbsp Flour
* 1tbsp Lemon Juice
* 1 Egg lightly Beaten
* 1tsp Water
Optional though best served with: Ice Cream or Whipped Cream
Directions:
1. Preheat oven to 350degrees F. Line 2 baking trays with parchment paper. Grease parchment paper with cooking spray.
2. Roll out the pastry dough and cut each sheet into 4.
3. Slice the strawberries and place it in a bowl. Place the blueberries in a separate bowl, and the raspberries in a third bowl.
4. Add 1/3 of the honey, brown sugar, flour, vanilla, nutmeg, cinnamon, and lemon juice to each bowl. Mix gently using a fork.
5. Using thumb and index finger, crimple the dough into a basket design, leaving the middle of the basket flat. Add some of the jam/jelly into the middle of each dough-basket. Add some fruit into each. Evenly divide the mascerrated fruit into all 12 dough-baskets (aka mini Galettes).
Note: Do not overfill each galette. You can add more than 1 type of fruit to each galette or make separate fruit galettes.
6. Whisk the egg and water together. Brush the pastry with some egg wash. Sprinkle some granulated sugar over each of the galettes, and bake at 350degrees for 32-35 minutes.
7. Once baked (semi-golden brown), take the Galettes out of the oven, and leave on tray to cool for 5-10 minutes. Warm the remaining jam in the microwave for 15 seconds, and brush some of the jam over each galette.
8. After the Galettes have cooled for 5 minutes or so, serve with Ice cream.
