Meatloaf



Ingredients: 
* 2lbs Lean Ground Beef
* 2tbsp Shallots, diced
* 1cup Bread Crumbs 
* 1/2cup Milk 
* 1 Egg, beaten lightly 
* 2tbsp Worcestershire Sauce 
* 1tsp Salt 
* Pepper to taste 
* 2tbsp Basil, fresh, chopped finely
* 2tbsp Oregano, fresh, chopped finely
* 1tbsp Garlic, chopped finely
* 1tbsp Ginger, chopped finely 
* 1tbsp Crushed Red Pepper Flakes 

For the Glaze:
* 2tbsps Brown Sugar
* 1/3cup Ketchup 
* 1tbsp Worcestershire Sauce 
* 1tsp Paprika
* 1tsp Cajun Powder



Directions:
1. Spray a 9x5 inch Loaf Pan with cooking Spray. Set aside. Preheat oven to 350degrees.  

2. Combine all the ingredients in a large bowl. Mix and knead well with your hand. Ensure all the ingredients are well combined and incorporated into the ground beef. Transfer to the loaf pan. Press the mixture into the loaf pan well. 

3. Bake at 350 degrees for 45 minutes. 

4. To make the glaze, combine the sugar, ketchup, worcestershire sauce, paprika, and cajun powder, in a bowl. Mix well. Once the meatloaf has baked for 45 minutes, take the pan out of the oven and top it with the glaze mix. Cover the top of the meatloaf fully with the glaze. Return to the oven. Increase temperature to 400degrees. Bake for 15 minutes. 

5. Once baked, leave to cool for 10 minutes, prior to transfering the meatloaf to a serving dish. 
Note: You can cut the meatloaf while still in the loaf pan as well.

6. Can be served with mashed potatoes, green beans or vegetables of your choice.
