Cornbread in a Skillet
Ingredients:
* 1 + 1/4cups Cornmeal
* 3/4cup All Purpose Flour
* 1/4cup Granulated Sugar
* 1tsp Salt
* 2tsp Baking Powder
* 1/2tsp Baking Soda
* 1/3cup Milk
* 1cup Buttermilk
* 2 Eggs, lightly beaten
* 1/4cup + 3tbsp Butter, melted
* 3-4tbsp Chives, chopped
Directions:
1. Preheat the oven to 425degrees, and heat the skillet pan in the oven while the batter is made.
2. In a bowl, combine the cornmeal, flour, sugar, salt, baking powder and baking soda. Whisk to combine. Add in the milk, buttermilk, and eggs, whisking well to combine. Add in the melted butter, reserving 1tbsp for later.
3. Add the chives to the batter and stir well.
4. Take the skillet out of the oven carefully using gloves. Add the last tablespoon of butter to the skillet and coat well. Transfer the batter to the skillet. Turn the oven temperature down to 375degrees. Bake for 22-25 minutes, placing skillet in the very center of the oven. Once baked, leave to cool for 15 minutes or so, prior to cutting and serving.
