Mudslide Trifle Glasses
For the Chocolate Khalua Layer:
* 3cups Cold Milk
* 3/4cup Dark Chocolate, chopped fine
* 1/2cup Granulated Sugar
* 1/3cup Cornstarch
* 1/4tsp Salt
* 1/2cup - 3/4cup khalua
* 1tbsp Vanilla Extract
For the Vanilla Baileys Layer:
* 1/3cup + 1tbsp Cornstarch
* 1/2cup Granulated Sugar
* 1/4tsp Salt
* 3cups Cold Milk
* 1/2cup - 3/4cup Baileys Irish Cream
* 1 + 1/2tbsp Vanilla Extract
For the Cake & Nuts Layer:
* 1cup Crushed Walnuts
* 1cup Oreo Cookie Crumble
* 2-3tbsp Unsalted Butter. melted
For the Chocolate Swirl Topping:
* 1/3cup Chocolate Chips
* 2tsps Unsalted Butter
Directions:
1. To make the Chocolate pudding, combine the sugar, milk and salt in a heavy bottomed pan and bring to boil on medium heat. As the mixture comes to a boil, stir well, and consistently. Add in the melted chocolate, and keep storring.
2. Combine the cornstarch with 2tbsp of water, mix well. Once the Milk Chocolate mixture has come to a boil, add in the cornstarch mixture, keep whisking, bring heat down to medium-low.
3. As you stir consistently, the mixture will start to thicken, It is important to keep the heat on low, or it will cook too fast. Once the mixture thickens, remove from heat (4-5 minutes on low heat), add the khalua and vanilla and whisk well. Leave to cool.
4. To make the vanilla Baileys pudding, combine the sugar, milk and salt in a heavy bottomed pan, and bring to boil on medium heat, whisking consistently.
5. Combine the cornstrach with 2 tbsp of water, and whisk well. Once the milk mixture has come to a boil, reduce the heat to medium-low and add in the cornstarch mixture. Whisk well and consistently, until mixture starts to thicken. Once mixture starts to thicken remove from heat and add the vanilla and Baileys. Whisk well, and leave to cool.
6. To make the walnut oreo crumble, combine the melted butter, oreo crumble, and walnuts and mix well to coat.
7. Once both puddings are cool, transfer to individual piping bags. Pipe a layer of the chocolate khalua pudding first, and add 2tbsps of the oreo walnut crumble. Pipe the vanilla Baileys pudding in next, followed by the khalua chocolate mixture, and so on. Chill for 2-4hours prior to serving.
8. To make the chocolate swirls, combine the butter and chocolate chips in a microwave safe bowl, and heat at intervals of 25 seconds 2-3 times. Mix well until smooth. Spread the chocolate on a baking tray evenly. Place the tray in the freezer for 2-4 minutes. Using a knife or spatula scrape the chocolate into curls, and leave it back in the freezer to chill more. Add the curls to the top of the pudding glasses when ready to serve.
