Mexican Fried Ice Cream
Ingredients:
* 6cups Cornflakes Cereal
* 1/2cup Salted Butter OR 1/2cup Unsalted Butter + 1tsp Salt
* 2 + 1/4tsp Cinnamon Powder
* Vanilla Ice Cream Out of the Freezer and at room temp. for 5 minutes
* 1cup Semi Sweet Chocolate Chips
* 2-4tbsp Whipping Cream
* 1/4cup Honey (for drizzling)
Optional: Whipped Cream
Directions:
1. First crush cornflakes, by placing them in a ziplock bag and using a rolling pin.
2. Melt the butter in a skillet or frying pan, add the cinnamon poowder and cornflakes and coat well. Fry well until the cornflakes turn crispy brown.
3. Move the mixture to a shallow plate and leave to cool. Line a plate or tray with parchment paper.
4. Using an ice cream scoop, scoop ice cream and form into balls; coat the ice cream balls immidiately with the cornflake mix.
5. Place the coated ice cream balls on the parchment paper lined sheet, and place in freezer, for 10-20 minutes.
6. When ready to serve, combine the chocolate chips and whipping cream in a heat proof bowl, and microwave in bursts of 20 seconds, 2-3 times. Take out of the microwave and mix well until smooth and creamy.
7. Place a Fried Ice Cream Ball on the plate, drizzle with chocolate, and Honey. Optional, add some whipped cream, and serve.
