Honey Crullers
Ingredients:
* 1cup All Purpose Flour
* 3 Eggs
* 1cup Water
* 6tbsp Unsalted Butter
* 1 Egg White, lightly beaten
* 2tsp Granulated Sugar
* 1/4tsp Salt
* Oil for frying
* 1 + 1/2cups Confectioners Sugar
* 3-5tbsp Whipping Cream
* 1tsp Vanilla Extract
Directions:
1. Bring the water, butter, sugar and salt to a boil, in a pan over medium heat. Add the flour slowly and stir until fully combined. Keep stirring and cooking for an additional 3 minutes until the mixture cooks more.
2. Once you notice a very thin film coating the bottom of the pan, turn off the heat. Transfer the mixture to the bowl of a stand mixer, and mix on low-medium speed for a minute or two until the mixture cools.
3. Once the mixture cools quite a bit, add in the egg and whisk on medium. Add in the eggs one at a time, and keep mixing. Now add in the additional egg white, and whisk until the mixture looks somewhat glossy.
4. Transfer the mixture to a piping bag with a star tip. Cut out 12 squares of parchment paper. Pipe a ring of batter onto each parchment paper.
5. Heat oil in a deep frying pan. Place each cruller in the oil, once the oil is hot, with the paper side up. Remove the paper with a tong, and fry the cruller for 2 minutes or so until golden brown. Place each cruller on a paper towel to soak up the oil.
6. To make the glaze combine the confectioners sugar, whipping cream and vanilla and whisk well.
7. Once the crullers have cooled completely, drizzle the glaze over them. Enjoy!!
