Funfetti Chocolate Frosted Pound Cake



Ingredients:
For the Cake:
* 1cup Unsalted Butter, at room temperature 
* 3 + 1/4cup All Purpose Flour
* 2cups Granulated Sugar
* 1tbsp Baking Powder 
* 1/2tsp Baking Soda
* 1tsp Salt 
* 2 Eggs + 5 Egg Yolks 
* 1 + 1/4cups Buttermilk, at room temperature 
* 2tbsp Oil
* 1tbsp Vanilla Extract 

For the Frosting:
* 3/4cups Unsalted Butter, at room temperature 
* 6oz Cream Cheese, at room temperature
* 2cups Confectioners Sugar
* 1/4cup Cocoa Powder 
* 1tsp Vanilla Extract 




Sprinkle on top:
* Birthday sprinkles

Directions:
1. Grease and line a sheet cake pan with parchment paper. Preheat oven to 325 degrees. 

2. Combine the flour, salt, baking powder, baking soda and sugar in a bowl, and whisk to combine. 

3. Combine the eggs, egg yolks, buttermilk, oil, and vanilla in a bowl and whisk to combine. 

4. Add the butter to the flour mixture, and using fingers rub the butter into the mixture. The mixtuire will become granulated. Ensure the mixture is well combined with the butter. Add half the buttermilk mixture to the flour mixture and using an electric hand whsik, beat on low until combined. Add in the last half of the liquid and whisk on medium-low until combined and smooth. 

5. Pour the batter into the prepared pan. Bake at 325degrees for 45-50 minutes. 

6. Leave on a wire rack to cool. While the cake is cooling, make the buttercream frosting. 

7. To make the buttercream - creamcheese frosting, add the cream cheese to a stand mixer with whisk attachment, and whisk for a few minutes until fluffy and whipped. Add the butter, and whip more until combined. Add the confectioners sugar, cocoa powder and vanilla and whisk until creamy, fluffy and combined. You can add a tablespoon of whipping cream should you want the frosting more creamy than thick. 

8. Ice the sheet cake by inverting the sheet cake onto a cutting board or plate of your choice. Sprinkle the brithday sprinkles in a design of your choice.
Note: I inverted the cake onto a parchment paper and then placed the parchment paper on a cutting board.
