Strawberry Oat Bars



Ingredients:
* 1cup Rolled Oats
* 3/4cup All Purpose Flour
* 1/3cup Brown Sugar, firmly packed 
* 1/4tsp Salt
* 1/4tsp Ginger (powder)
* 6tbsp Unsalted Butter, melted 
* 2 + 1/2cups Sliced Fresh Strawberries 
* 1 + 1/2tsps Cornstarch
* 1tbsp Freshly Squeezed Lemon Juice 
* 1tbsp Granulated Sugar
* 1/2cup Confectioners Sugar
* 1/2tsp Vanilla Extract 
* 2-3tbsp Whipping Cream 



Directions:
1. Preheat oven to 375degrees F. Grease and line a square baking pan (8x8) with baking spray and parchment paper. Set aside. 

2. Combine oats, flour, brown sugar, salt and ginger in a bowl. Whisk to combine. Add in the melted butter, and mix until well coated. 

3. Press 3/4 of the oats mixture into the bottom of the prepared pan. 

4. Add the fresh strawberries on top, and sprinkle the cornstarch. Sprinkle 1/2tbsp of sugar over the mixture, and then squeeze the tablespoon of lemon juice. Then add on the remaining 1/2tbsp of sugar. 

5. Now sprinkle the 1/4cup of oat mixture left over. Bake at 375degrees for 38-40 minutes. Once done, place the pan on a wire rack to cool fully. 

6. To make the drizzle, combine the sugar, vanilla and whipping cream in a bowl and whisk until smooth. Once the oatbars are cool, add the drizzle. 

7. Cut into squares and enjoy!
