Strawberry Chocolate Cheesecake in a Glass
Ingredients: Makes 6 Dessert Glasses
Layer 1:
* 12 Lady Fingers, cut into smaller pieces (2 per glass)
Layer 2: White Chocolate Cheesecake Filling
* 8oz block of Cream Cheese, at room temperature
* 3/4cup White Chocolate Chips, melted
* 1/2cup Confectioners Sugar
* 1/2tsp Vanilla Extract
* 1cup Whipping Cream
Layer 3: Topping
* 1/3cup Strawberry Jam
* 2cups Strawberries, quartered
* Mint for Garnish
+ Wine glasses of your choice
Directions:
1. First make the filling. Combine the cream cheese and confectioners sugar in a bowl, and using an electric hand whisk, beat well to combine. Gradually pour in the melted white chocolate, whisking slowly as you go. Add in the vanilla and whisk a bit more, to combine.
2. In the bowl of a stand mixer with whisk attachment, whip the whipping cream until soft peaks form. Do not over beat.
3. Gently fold in the whipped cream into the cream cheese mixture.
4. Warm the jam in a microwave safe bowl. Strain the jam to ensure there are no seeds remaining. Add the quartered strawberries to the strained jam, and mix gently.
5. To put the dessert glasses together, transfer the cream cheese mixture into a piping bag (will provide for less messy dessert glasses). First place 2 lady fingers at the bottom of each dessert glass.
Note: I used Margarita glasses as they are deep enough to hold the dessert but hollow enough to show the dessert off well.
6. Pipe the chocolate/cream cheese mixture into each glass. Do not over fill. Leave enough room at the top to add in the strawberries.
7. Add in the strawberries over the mixture. You may want to use a small tong or spoon to add them in one at a time. Garnish with mint leaves.
8. Refrigerate for 1-2 hours before serving.
