Lemon Blueberry Baked Cake Donuts

Bake time: 12 minutes
Ingredients:
* 1 + 1/2cups All Purpose Flour
* 1/4cup Brown Sugar
* 1/2cup Granulated Sugar
* 1 + 1/2tsp Baking powder
* 1/2tsp Salt
* 1/8tsp Nutmeg
* 3tbsp Unsalted Butter, melted and cooled
* 1/2cup Milk
* 1/2tsp Vanilla Extract
* 1tbsp Lemon Juice
* 1 Egg
* 3/4cup Fresh Blueberries
For the Cream Cheese Frosting:
* 2tbsp Unsalted Butter at room temperature
* 1/3 brick of Cream Cheese, at room temperature
* 1cup Confectioners Sugar
* 2tsp Lemon Juice
* 2-3tbsp Whipping Cream
* Optional: Zest of 1 Lemon as a garnish
Directions:
1. Preheat oven to 350degrees F. Spray 2 donut pans with cooking spray and set aside.
2. Combine the dry ingredients flour, sugars, baking powder, salt and nutmeg in a bowl, whisk with a hand whisk, and set aside.
3. Melt the butter in a microwave safe bowl, and set aside to cool a bit.
4. Combine the milk, vanilla and egg in a bowl, and whisk well until frothy and combined.
5. Add the wet ingredients including the butter, to the dry ingredients, mixing until just combined. Then add the lemon juice to the batter, and mix. Finally fold in the blueberries gently.
6. Transfer the batter to a piping bag, and pipe the batter into the donut pan, 2/3full only.
7. Bake at 350degrees for 12 minutes. Leave donuts in the pan on a wire rack to cool for 10 minutes, and then invert onto wire rack.
8. To make the creamcheese frosting, beat the butter and creamcheese together with an electric hand whisk. Then add in the confectioners sugar and beat with the whisk on low speed. Add in the whipping cream and the lemon juice, turn the beater to medium - high and beat for 2 more minutes, until the frosting becomes smooth and creamy.
9. Once the donuts are cooled fully, dip each one in the creamcheese frosting and place on a wire rack to dry. Garnish with lemon zest.
