Bacon & Egg Cups
Prep time: 20 minutes
Bake time: 15-20 minutes
Ingredients:
* 8 Eggs
* 16 Bacon strips
* 8 Slices of Bread
* 1cup of Mushrooms diced
* 1/4cup Onion diced
* Salt and Pepper to taste
* Chives for garnish
* Cooking spray
* Muffin pan (pan with 12 cups)
Directions:
1. Fry up the bacon slices until they are half cooked.
2. Using some of the oil rendered from the bacon, sautee the mushrooms and onion, adding salt and pepper to taste.
3. Using a cookie cutter or a glass, cut rounds from each slice of bread (the size of the bottom of the muffin pan). You should have 8 bread circles.
4. Grease the muffin cups well. Ensuring it is greased well is important or the cups will not come out with ease once baked.
5. Place a circle of bread at the bottom of each cup.
6. Place 2 slices of bacon in a circle (edging the muffin cups), and over lapping if necessary.
7. Add a little mushroom and onion to the middle of the cups.
8. Break one whole egg into each cup.
9. Season with salt and pepper, and bake in oven at 400 degrees, for 15-18 minutes.
10. Once out of oven, use a spoon to take each cup out gently. Garnish with diced chives.
