Peanut Butter Skillet Cookie
Bake time: 15-18 minutes
Ingredients:
* 1/2cup Unsalted Butter at room temperature
* 1/2cup Granulated Sugar
* 1/4cup Brown Sugar
* 1 Egg
* 1tsp Vanilla Extract
* 1cup All Purpose Flour
* 1/3cup Cocoa Powder
* 1tsp Cornstarch
* 1/2tsp Baking Soda
* 1/4tsp Salt
* 1cup Peanut Butter Cups, minis
For the topping:
* Vanilla Ice Cream
* 1/2cup Peanut Butter Cupps
* 1/cup Semi - Sweet Chocolate Chips, melted
* 1/4cup Peanut Butter, melted
Directions:
1. Preheat oven to 350degrees F. Grease a 9" skillet with butter. Set aside.
2. Cream the butter, and two sugars in the bowl of a stand mixer (with a a paddle attachment). Oncde the mixture is creamy and well combined add in the egg and vanilla and mix on low to combine well. Do not over mix.
3. In a separate bowl combine the flour, cocoa, salt, baking soda and cornstarch. Comibine using a hand whisk.
4. Add the flour mixture to the butter/sugar mixture, beat on low until just combined. Add in the peanut butter cups and mix by hand.
5. Transfer to the prepared skillet, and spread the mixture, leaving a 1/4-1/2inch space between the dough and the edges of the skillet (leaves room for it to spread evenly as it bakes). Bake at 350degrees for 15-17 minutes.
6. Transfer the skillet to a wire rack and leave to cool for 10-15 minutes.
7. When ready to serve, melt the peanut butter and chocolate chips in separate bowls. Sprinkle the remaining peanut butter cups over the cookie, and add on some scoops of ice cream (you pick how many scoops you think you need). Then drizzle the melted peanut butter and melted chocolate over the cookie and the ice cream.
