Key Lime Cupcakes



Ingredients: 
For the cupcakes:
* 1+ 1/2cups All Purpose Flour 
* 1tsp Baking powder 
* 1/2tsp Salt
* 1cup Granulated Sugar 
* 1/2cup Unsalted Butter at room temperature 
* 2 Eggs
* 1/2tbsp Lime Zest 
* 1/2tsp Vanilla Extract 
* 1cup Buttermilk 

For the Filling:
* 4oz Cream Cheese at room temperature 
* 1/4cup Sweetened Condensed Milk 
* 2oz Lime Juice 

For the Lime Buttercream: 
* 1/2cup Unsalted Butter at room temperature 
* 3 + 1/2cups Confectioners Sugar 
* 1/4cup Filling 
* 1/8cup Lime Juice 
* 1/8tsp Salt 

For the Topping:
* 1/4cup Graham Cracker Crumbs 
* 2tbsp Unsalted Butter, melted 
* 1tbsp Light Brown Sugar (golden)
* 2 Limes cut into 1/8ths 




Directions:
1. Pre-heat oven to 350dgrees F. Line 18 muffin cups with liners. 

2. Combine the flour, baking powder and salt in a bowl. Whisk to combine and set aside. 

3. Beat the butter and sugar, in the bowl of a stand mixer (with paddle attachment), until fluffy and pale. Add in the eggs one by one, beating in between, and scraping down the sides and the bottom of the bowl, intermittently. Add the lime zest and vanilla, and beat to combine. 

4. Add in the dry ingredients and buttermilk alternating between dry and wet. Beat in between each addition. Start with the dry ingredients and end with the dry. 

5. Divide the batter between each liner evenly, filling two thirds full. Bake at 350degrees for 15-17 minutes. Baking times may vary based on the heat of your oven. 

6. Once ready, leave the cupcakes in the pan on a wire rack to cool for 10 minutes. Then transfer to wire rack to cool fully. 

7. To make the cream cheese filling, beat the cream cheese until smooth and fluffy. Add in the condensed milk and lime juice and beat to combine. Set aside 1/4 cup of the filling for later. Refrigerate the rest for later. 

8. To make the buttercream, whisk the butter using an electric hand beater, until pale yellow. Add in the lime juice, salt, vanilla, reserved filling mix, and half the confectioners sugar. Beat will to combine. Gradually add the remaining confectioners sugar until the desired consistency is reached. Transfer to a piping bag. 

9. To make the graham cracker crumble, pre heat the oven to 350 degrees. Line a baking sheet with foil. Combine the crumbs, melted butter, and brown sugar in a bowl. Spread the mixture out on the foil in a thin layer. Bake for 4 minutes until golden. Remove from oven and leave to cool. Once cooled, crumble up the crumbs. 

10. To assemble the cupcakes, first remove a small part of the middle of the cupcake (reserve the tops) and fill in the cream cheese filling. Replace the tops. Pipe the frosting on to each cupcake. Sprinkle with the crumbs and a piece of the lime.
