Double Chocolate Pecan Pancakes


Prep time: 20 minutes
Cooking time: 20 minutes 

Ingredients:
* 1 + 1/2cups All Purpose Flour
* 1/4cup Granulated Sugar 
* 1/4cup Cocoa Powder
* 1tsp Baking Soda 
* 1/2tsp Salt 
* 1cup Milk 
* 2 Eggs
* 1tsp Vanilla Extract 
* 1/4cup Unsalted Butter, melted and cooled 
* 1/4cup Semi-Sweet Chocolate Chips 
* 1/4cup Pecans, chopped
* 1/2cup Blueberries
* 3 Mandarins, peeled and sectioned 
* Maple syrup or Pancake syrup of your choice 
* Optional: Butter




Directions:
1. Combine the all purpose flour, baking soda, salt, cocoa powder and sugar, in a bowl. Whisk to combine. 

2. In a separate bowl, combine the eggs, milk and vanilla together, and whisk to combine. Add the melted butter to the mixture and whisk to combine. 

4. Add the wet ingredients to the dry ingredients, and whisk well to combine. Fold in chocolate chips and chopped pecans. 

4. Heat a pan on stove top (flat frying pan is best) and add a tsp of oil, swirling around to coat the pan. Pour a half cup of batter in to the pan. Let one side cook, and then flip the pancakes to cook the other side. Continue on with the rest of the pancakes, adding a tsp of oil to coat the pan, in between pancakes.  

5. Top pancakes with fresh blueberries and mandarins; pour pancake syrup or maple syrup of your choice. Optional, add butter to pancakes.
