Homemade Waffles with Berries
Prep Time: 20 minutes
Cooking time: Depends on your waffle Iron
Serve immediately
Ingredients: Makes 6-8 Waffles
* 2cups All Purpose Flour
* 1/4cup Granulated Sugar
* 4tsp Baking Powder
* 1/2tsp Salt
* 1/4cup Unsalted Butter
* 2cups Milk
* 2 Eggs
* 2tsp Vanilla Extract
Option 1: For the Chantilly Cream:
* 1 + 1/3cup Whipping cream
* 2tbsp Granulated Sugar
* A Pinch of Salt
* 1tsp of Vanilla Extract
For the Topping:
* 1cup Blueberries
* 1cup Strawberries cut into quarters
* 1cup Blackberries
* 2-3tbsp Granulated Sugar
Option 2: Strawberries, Maple Syrup of your choice & Butter.
Directions:
1. Combine the flour, sugar, baking powder and salt together in a large bowl, and whisk (hand whisk) to combine.
2. Melt the butter with 2tbsp of Milk in a bowl in the microwave. Add the melted butter to the Milk, and whisk together well in another bowl. Add the eggs one at a time and whisk (hand whisk). Add in the vanilla and whisk again.
3. Pour the wet ingredients into the dry ingredients. Using hand whisk, whisk well. Some clumps are okay. Do not over beat.
4. Turn on the waffle maker, and pre heat to the desired temperature setting. When ready, add the desired amount of mixture to the waffle iron and cook.
5. To make the Chantilly cream, beat the whipping cream on medium speed (use electric hand whisk if possible), until soft peaks start to form. Add in the sugar and continue beating on medium speed. Once stiff peaks start to form, add in the vanilla extract and salt, and turn beater to high and beat for 1-2 minutes. The cream is ready when stiff peaks form and the cream can hold its shape on the beater.
6. Combine the cut strawberries, blueberries and blackberries in a bowl, with 2-3 tablespoons of sugar and leave for 15 minutes.
7. When waffles are ready, add a dollop of the Chantilly cream, pile high with berries and enjoy! Optional: You can also have the waffles with a maple syrup of your choice.
