Blackberry Cheesecake Bars
Ingredients:
* 1cup Graham Cracker Crumbs
* 1 + 1/4cups Granulated Sugar
* 1/3cup Unsalted, Melted Butter
* 1/2tsp Nutmeg
* 2 + 1/2 (8oz) Packages of Cream Cheese, at room temperature
* 2tbsps All Purpose Flour
* 1tsp Vanilla Extract
* 3 Eggs
* 4tbsp Blackberry Jam
* 20 Fresh Blackberries
Directions:
1. Combine the graham cracker crumbs, 1/4cup sugar, nutmeg and melted butter, and mix well with a fork. Ensure the consistency of the mixture becomes like wet sand.
2. Prepare a 9x9 square baking dish with aluminum foil (leave a little overhang over the sides of the dish), and spray the aluminum foil with cooking spray.
3. Preheat oven to 350degrees. Spread the graham cracker mixture in the prepared dish, pressing down lightly to form a base. Bake at 350degrees for 10-12 minutes. Remove from oven and leave to cool while you make the cheesecake mixture.
4. Combine the cream cheese and the sugar (1 remaining cup) in the bowl of a stand mixer (with paddle attachment, or use a hand whisk (electric)), and beat on low-medium until creamy and smooth.
5. Keeping beater on low, add in the flour and vanilla and beat until just combined. Scrape the sides and bottom of the bowl as needed.
6. Add in the eggs one at a time, beating in between additions. Once fully combined (take care not to overbeat), pour the mixture over the cooling base. Place the tablespoons of blackberry jam in the four corners of the dish and swirl it towards the middle of the dish.
7. Place the fresh blackberries in rows of 5 through the dish, embedding the berries half way into the cheesecake batter.
8. Bake at 350degrees for 35-40 minutes. Once done, remove the cheesecake from the oven and leave on wire rack to cool for 2 hours. Once fully cooled, place it in the refrigerator for 2-4 hours (overnight works best). Leave the cheesecake in the baking dish when you place it in the refrigerator to chill.
9. After the cheesecake has chilled you can cut it into squares. Enjoy!!
