Peanut Butter Fudge Balls
Ingredients:
* 3/4cup Unsalted Butter at room temperature
* 1 1/2cups Creamy Peanut Butter
* 3cups Confectioners Sugar
* 1/4 - 1/3cup Milk
* 1cup Semi-sweet Chocolate Chips
Directions:
1. Using a stand mixer or handheld mixer, cream the butter and peanut butter together until creamy and smooth.
2. Keeping speed on low, add the confectioners sugar and a 1/4cup milk. Whisk until well combined and smooth, scraping the sides and bottom of the bowl as you go. Turn beater to medium-high and whisk for an additional 2 minutes.
3. Place the bowl with mixture in it in the refrigerator for an hour or even over night.
4. Take the mixture out of the refrigerator, and using a small scoop make small balls of the peanut butter mixture.
5. Place the chocolate chips in a heat proof bowl, and microwave at 15second bursts mixing in between until the chocolate has melted and smooth.
6. Place the peanut butter balls in the chocolate mixture, coating well, and using a fork or round spoon to place each coated ball on a parchment lined baking sheet (shake any excess chocolate off). Once all the peanut butter fudge balls are all coated, place the baking sheet in the freezer for 30 minutes, until the chocolate coating has set.
** Leave at room temperature for 10 minutes before serving.

DeleteWhat’s better than peanut butter and chocolate? This will probably leave you with a sugar high, but will still be totally worth it. These melt in your mouth peanut butter balls are amazing and definitely on my list of Favs!
