Overnight Strawberry Cheesecake Bake
We celebrated Christmas differently this year, by having a small family brunch and opening presents, due to the pandemic and keeping within our own bubbles. It was fun coming up with a brunch menu, including a dessert after brunch. Hence the Strawberry Cheesecake Overnight Bake!
Prep time: 30 minutes
Overnight Chilling time: 12hours
Bake time: 1 hour
Ingredients:
* 12-16 slices of Italian or French bread
* 12oz (1 1/2packages) of Cream Cheese at room temperature
* 2/3cup Granulated Sugar
* 1 Egg
* 1tsp Lemon Juice
* 10 Eggs
* 3/4cup Milk
* 3/4cup Half n Half
* 1/3cup Maple Syrup
* 2tsp Vanilla Extract
* 1tsp cinnamon Powder
* 1/2tsp Ground nutmeg
* 2-3cups Sliced Strawberries
Directions:
1. Grease a 9x13 inch baking dish (glass dish).
2. Using a stand mixer or electric hand mixer, beat the cream cheese until smooth and soft. Add in the sugar and beat until combined. Add in 1 egg and the lemon juice, and beat until combined. Set aside.
3. In a bowl, combine the 10 eggs, milk, half n half, maple syrup, vanilla extract, cinnamon and nutmeg, and beat well together to combine. Set aside.
4. Layer the slices of bread with the cream cheese mix, and add slices of the strawberry to it. Chop it up into bite size pieces and layer the prepared dish with it. Continue until the whole dish has been layered. Pour any excess cream cheese over the top and layer with strawberries that are remaining.
5. Pour the egg mixture over the bread. Cover with saran wrap, and refrigerate for 12 hours.
6. When ready to bake, pre-heat oven to 350degrees. Bake covered with foil (remove saran wrap), for 25 minutes. Then remove the foil and bake for an additional 25 minutes.
