Chocolate Macaroon Bars

  

Prep time: 20 minutes 
Cook time: 40 minutes total 

Ingredients:
For the Base:
* 1 1/4cups All Purpose Flour 
* 1/2tsp Baking Powder
* 1/2tsp Salt
* 1/2cup Unsalted Butter, softened to room temperature 
* 1/3cup Granulated Sugar 
* 2/3cup Brown Sugar 
* 1 Egg
* 1tsp Vanilla Extract 
* 1/2cup Semi-sweet Chocolate chips 
* 1/2cup Roasted Pecans chopped 

For the Macaroon Topping:
* 2 Eggs 
* 1/2cup Granulated Sugar 
* 1/2tsp Salt 
* 1/2tsp Vanilla Extract
* 3/4cup All Purpose Flour 
* 1cup Sweetened Shredded Coconut 
* 1cup Unsweetened Shredded Coconut

  

Directions:
1. Preheat oven to 370degrees. Line a 8x8inch square baking pan with parchment paper, and spray with cooking spray or grease with butter. Set aside. 

2. For the base, combine the flour, baking powder and salt in a bowl, whisk together and set aside. 

3. Using a stand mixer, or hand held electric mixer, combine the butter, granulated sugar and brown sugar together, and beat until soft and creamy. Add the egg and vanilla and beat to combine. 

4. Add the flour mixture to the butter mixture in two batches and beat just to combine, scraping the sides and bottom of the bowl in between beating. 

5. Fold in the chocolate and pecans, using a wooden spoon or spatula. 

6. Pour/spread the mixture in the prepared pan, and bake at 370degrees for 15 minutes, or until the mixture gets slightly golden in color. 

7. To make the macaroon topping, using an electric beater, whisk the eggs, sugar, salt and vanilla, to combine. Add the flour, the cup of unsweetened coconut, and 1/2 the cup of sweetened coconut and mix on low until combined. Scrape the sides and bottom of the bowl to ensure all the ingredients have combined. 

8. Pour the mixture over the base. Use a wet spatula to spread the mixture over the base. Sprinkle the 1/2cup of sweetened coconut over the mixture. Bake for 20 minutes at 370degrees. 

9. Cool in the pan on a wire rack for 15 minutes. Then remove the macaroon bar from the pan, using the parchment paper, and leave on the wire rack to cool fully.  

10. Transfer to a cutting board and cut into small squares of any size you like.
