Chocolate Banana Loaf Cake with Frosting
Ingredients: (Makes 1 Loaf)
* 1cup All Purpose Flour
* 1/2cup Cocoa Powder
* 2tsp Baking Powder
* 1/2tsp Salt
* 1 1/2cups Mashed Bananas
* 1 Egg
* 3/4cup Oil (vegetable/ canola)
* 3/4cup Brown Sugar
* 1tsp Vanilla Extract
* 1cup Semi-sweet Chocolate Chips
* 1cup Walnuts or Pecans chopped
Frosting:
* 1/2cup Butter at room temperature
* 1/2cup+ 1 1/2tbsp Unsweetened Cocoa Powder
* 1 1/2cups - 2cups Confectioners Sugar
* 2-3tbsp Milk
* 1/8tsp Salt
* 1/2cup Chopped Walnuts
Directions:
1. Pre-heat oven to 350degrees. Grease a loaf pan (9"X5") or line with parchment paper and then grease the parchment paper.
2. Combine dry ingredients: Flour, Baking powder, Salt and Cocoa powder in a bowl. Whisk together and set aside.
3. In another bowl, whisk together the banana, oil, sugar, vanilla and egg. Best mixed with stand mixer (paddle attachment) or handheld mixer. Gradually add the dry ingredients into the bowl with wet ingredients, mixing well.
4. Fold in the chopped walnuts and chocolate chips.
5. Transfer into the prepared loaf pan, and bake at 350degrees for 50-60 minutes, depending on your individual oven.
6. Cake will be done when inserted toothpick comes out clean. Leave in pan to cool for 10 minutes, then invert on to wire rack and leave to cool completely.
7. For the frosting, using a handheld electric beater, beat the butter on medium-high speed for a minute or two, until soft and smooth.
8. Add in the cocoa powder and continue beating on low. Then add in the confectioners sugar, salt and milk, bringing the frosting to a consistency so as to coat the loaf cake.
9. Once loaf cake is completely cooled, frost the cake. Sprinkle with chopped nuts.
10. Slice and serve.
