Buttermilk Pancakes with Maple Syrup and Berries
Ingredients: Makes 12 small or 6 large pancakes
* 2cups All purpose Flour
* 1/2cup Granulated Sugar
* 2tsp Baking Powder
* 1tsp Baking Soda
* 1/2tsp Salt
* 1 1/2cups Buttermilk + 1/4cup extra if required
* 1/3cup Unsalted Melted Butter
* 2tsp Vanilla Extract
* 2 Eggs
* 1-2cups Fresh Blueberries
* 1-2cups Fresh Strawberries
* Maple Syrup as needed for the pancakes
* Butter for the pancakes
Directions:
1. Combine the flour, baking soda, baking powder, sugar and salt in a bowl, and whisk together.
2. Make a well in the center of the mixture and pour in the buttermilk, vanilla, egg and the melted butter (slightly cooled). Start by whisking the wet ingredients together, gradually incorporating the dry ingredients around it. Mix until the ingredients are all combined.
3. Check the batter consistency by using a ladle to pour some batter. Should the batter feel too thick and not pour out of the ladle easily (not too runny though), add in an additional tablespoon or two of milk, and whisk well, until desired consistency is achieved. Set aside for approximately 5-10 minutes.
4. Heat a griddle or frying pan on medium heat, add a little butter to grease the pan. For best results use a paper towel dipped in oil or butter and wipe the griddle or pan with oil or butter prior to pouring the batter.
5. Once the griddle is hot, pour a 1/3cup of batter on to the griddle, and swirl the batter around. Once cooked on one side, flip the pancake to cook on the other.
6. Cut up the strawberries into quarters.
7. Pancakes can be served with strawberries, a 1/4cup of blueberries, some butter and maple syrup.
Alternately, pancakes can be served with a whipped cream of your choice.
